Bruschetta Goat Cheese Canapes on Villaggio Bread (Giveaway)

With a husband who can cook and make everything taste good, I sometimes find myself intimidated in the kitchen. I know he can cook much, much better than I can so it only makes sense for me not to interfere, right? Thus, I'll stick with the simpler things that require less prep and effort, such as appetizers and desserts. While walking through Whole Foods one day, I came across a sampling table where customers could try a bruschetta goat cheese canapé. It was so tasty and easy to make that I picked up a package of Woolrich Dairy Chevrai Bruschetta Goat Cheese to keep in the fridge for when company came over. For the bases, I decided to use Villaggio Whole Wheat Sliced Bread cut into squares and toasted to add a hint of crispiness.
For this recipe, I used four slices of Villaggio Italian Style bread. Trim the crust, which can later be used to make bread crumbs. Cut into squares or use a cutter to make more interesting bite-size shapes.
Lightly brush on some extra virgin olive oil and place on a baking rack. I used the rack that came with my toaster oven.
Toast at about 325 degrees for roughly 15 minutes or until they are as golden and crispy as you prefer.
In a baking dish, press the bruschetta goat cheese into a thin layer at the bottom. I used small casserole dishes and was able to yield two dishes.
You can use leftover tomato sauce or make a fresh batch and layer it on top of the goat cheese. Bake at about 320 degrees for 15-20 minutes. Using a small spatula, place a small helping of the goat cheese topping on the canapé bases and serve while still warm.
Alternatively, you can use a roller to flatten the Villaggio bread before toasting to obtain a flatter canapé base. Our recent guests enjoyed these Bruschetta Goat Cheese Canapés, so much so I made a second batch!

sad, but my fave is grilled cheese!! love it! although I will say that I have been doing a lot of panini press recipes lately and my son is all about those right now!
ReplyDeleteI love french toast. It is one of my favourite breakfasts. The secret to a great french toast is to put it in the oven after you pan sear it, and bake it at 350 for about 20 minutes, it becomes light and fluffy just like bread pudding!

ReplyDeletecut the crust off your bread..roll it out thin. smear on a thin layer of cheez whiz, and roll it up. brush with melted butter. and broil until golden, then roll over and broil until that side is golden, my whole family loves these...my hubby calls them trailer park pinwheels (because we live in a trailer) lol

ReplyDeleteVillaggio bread is great for making garlic toast. Butter both sides and sprinkle lightly with garlic salt. Put on a cookie sheet and bake until both sides are lightly brown. Scrumptious.
